Carrot Cake! The best ever.

I have this very fuzzy but sweet memory of being three years old and siting on my mother's kitchen counter as she made carrot cake next to me. That's the only time I remember her making carrot cake. I think for that reason, it stuck in my head and heart as my favorite cake. Also, so full of the best things that I love including carrots, cinnamon and walnuts. And, cream cheese frosting? What's not to love?

I don't have this very often. But once a year on my birthday I get one amazing slice.

@anwebservices, those fruits look very healthy but I'm betting this cake you are showing us is not healthy at all.

Do you know what the icing is made of? It looks really good. I don't think I have ever tried this before.

Google says meringue cake with marshmallow center.

I like that idea.

Wll original pavlova cake base is made entirely of egg-whites and sugar which comes like meringue, so it's not icing at all

Below fruits is just little of cream for extra taste ;)

Here is the recipe from Betty Crocker.

Very easy to make. I know your mom will love it.

1 box Betty Crocker™ SuperMoist™ lemon cake mix
1 cup water
1/3 cup vegetable oil
1 tablespoon grated lemon peel
3 eggs
2 boxes (4-serving size each) lemon instant pudding and pie filling mix
3 cups milk
Whipped cream, if desired
Directions

1 Heat oven to 350°F. Spray 13x9-inch pan with cooking spray (do not use dark or nonstick pan). In large bowl, beat cake mix, water, oil, lemon peel and eggs with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan; set aside.
2 In medium bowl, beat pudding mix and milk with whisk or spoon 1 to 2 minutes or until smooth. Drizzle pudding over batter to within 1/2 inch of edges of pan.
3 Bake 55 to 60 minutes or until deep golden brown and edges pull away from sides of pan. Cool 20 minutes. Top of cake will have irregular surface.
4 Spoon warm pudding cake, top side down, into bowls; top with whipped cream. Store covered in refrigerator.

These are my favorite cake! The Blueberry Cheesecake, Yema Cake, and Brazo de Mercedes. These are my top 3 cakes that I can't stop eating whenever we have. I do have a sweet-tooth and a teary eye when it comes to these three. If I have enough money, I make sure to have a stock of these three at my fridge.

Strawberry cheesecake, cherry cheesecake, chocolate cheesecake, vanilla cake, lemon cake, strawberry shortcake, some chocolate cakes also. Chocolate cakes are complicated because if not prepared correctly they can taste really terrible. I like mine moist and chocolaty. Not everyone can get the recipe right. I also enjoy crunch cake and pound cake.

A black forest cake is probably the best or rather perfect for me in terms of all the cakes that I've tasted before. Like I love how the flavors can blend and at the same time taste different like there are too much chocolate flavors in the cakes, and also it's not that expensive and perfect for someone who is going to celebrate his/her birthday.

I like Carrot cakes and Mango cakes. My mother used to baked before and carrot cake was the flavor of cake she would probably bake. So we used to eat carrot cake with moms recipe. I really missed those times when we have still the oven but unfortunately we haven't buy a new one yet. Second one is the mango cake. I like the taste of mango so probably liking it is more easier to do.
