Hi all. I'm on a quest! A quest to include more vegetables in my diet. I've been told that I don't eat enough vegetables and am eating too much processed food and that I would benefit greatly from eating more vegetables or including them in my diet more anyway.
I do have a grocer store down the road from me but I never really use it. I usually just stop at the supermarket on the way home and grab some things I can cook quickly. Mostly things I can cook quickly either in the oven or the microwave!
But a lot of this is either frozen or processed and has been pre-cooked and then when it's frozen and then reheated, it looses a lot of its goodness, the vitamins & minerals that vegetables have. That is why you should always steam your vegetables rather than boil them as the vitamins and minerals go back down into the vegetables as they're steaming and you can use the water at the bottom to make gravy with!
See I know a bit about cooking. I actually enjoy cooking if I'm making myself a nice meal and I'm hungry! But sometimes I'll cook a meal and not really enjoy it that much even if I am hungry because it wasn't really prepared by me and was slapped together by someone in a factory or something and probably isn't as healthy and good for me as what it would be if I was to actually make that meal myself!
The other day I cooked a cheesy broccoli and cauliflower bake which was nice! Extremely cheesy which kind of counters out all the goodness in those veggies lol but hey, at least I'm still getting fresh cooked vegetables in me right?
So I'm going to actually pay a visit to my green grocer tomorrow and buy a bunch of fresh vegetables that I can prepare and cook at home myself instead of buying prepared meals and the like and start doing a bit more healthy eating!
I suppose I could buy a big bag of potatoes! My old man used to do that when I was growing up and we used to get through them in no time but that was a house full of 6 people in the 80's! But that would probably do the trick and there's a lot you can do with a potato, and a lot you can have it with.
But what are some other good vegetables to buy and how much of each should I buy and how long do they last?
Do some fresh vegetables last longer than others?
Which are best to buy in bulk?
Not really looking for expert answers so much as just some good suggestions or recommendations from those moms and solo cooks out there that get their daily intake of 5 a day! Or is it 7 a day nowadays? They keep putting it up!

i think all veggies are good for anybodys diet! they have exactly what our body needs, as far as vitamins and nutrients!!!! some actually dont taste as bad as people make them out to be.
